I switched from non-stick to stainless steel, and there’s definitely a learning curve. Once you learn the proper technique (preheating the pan and using the water drop test), it’s actually fantastic. To my surprise, it’s become more non-stick than my old non-stick pan for most everyday cooking. I also have peace of mind knowing I’m avoiding microplastics and not worrying about the coating wearing off over time. If you’re thinking about making the switch, don’t give up after the first few tries. Learn the tricks first; it really does get easier, and I don’t think I’ll go back.
